Job Summary
The Commis 3 prepares ingredients, cooks food according to recipes, and maintains workstation sanitation at Kampala Marriott Hotel. This cook operates kitchen appliances, monitors food quality and storage temperatures, sets up and breaks down stations, and adheres to Marriott safety standards.
Key Roles & Operational Responsibilities
1. Food Preparation & Cooking
- Mise en Place & Prepping: Wash, peel, portion, chop, weigh, measure, and mix ingredients for hot and cold dishes following official recipe checklists.
- Line Cooking: Cook food using commercial kitchen equipment including ovens, stoves, grills, microwaves, and fryers.
- Quality & Portion Control: Test food to ensure proper cooking temperatures and taste standards; serve food in exact portions onto designated receptacles.
2. Station Maintenance, Hygiene & Appliance Monitoring
- Sanitation & Cleaning: Wash and disinfect kitchen areas, food preparation tables, tools, knives, and cooking equipment before, during, and after shifts.
- Station Setup & Breakdown: Organize ingredients, utensils, and station layout prior to service and execute full breakdown and storage procedures post-service.
- Temperature Verification: Monitor and record appliance and food storage temperatures to meet food safety standards.
3. Safety, Compliance & Teamwork
- Safety Standards: Follow all corporate safety, security, and hazard policies; report accidents, maintenance needs, or unsafe conditions immediately.
- Professional Conduct: Maintain a clean, professional uniform and personal appearance, use clear language, and support kitchen teammates to reach daily service goals.
Foundational Capabilities & Prerequisites
Required Qualifications & Experience
- Educational Baseline: High school diploma or G.E.D. equivalent.
- Culinary Track Record: At least 1 year of related work experience in a professional kitchen, restaurant, or hotel environment.
- Supervisory Requirement: None required.
- Certifications: No mandatory license required prior to hire (safety training will be provided on-site).
Physical Requirements & Working Conditions
- Ability to stand, sit, or walk for extended periods or an entire work shift.
- Ability to reach overhead and below the knees, including bending, twisting, pulling, and stooping.
- Capacity to move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.
